Four different French ministries, in charge of Culture, Tourism, Environment and Agriculture, came together to create the concept they established in 1995, in creating a list of 100 Remarkable Good Taste Sites which distinguish a food product that is strongly anchored in and symbolic of a given geographical territory. The product also benefits from a strong reputation, long history and exceptional heritage. Its positive impact on the environment and on architecture is also explained. The public can thus learn about the connections between the product, cultural heritage, the surrounding landscapes and the work of man.

The Product – First French bovine meat awarded a label, in 1996, the AOP bull from Camargue owes its excellent taste to the conditions it is raised in. The bulls graze over vast spaces – they are raised to compete in the Course Camarguaise bull games. They graze in semi-freedom on different soils. Their constant movement and their varied natural grazing confer great finesse and unique taste to the meat. Dark red bull meat is very healthy, with very low levels of fatty acids.

The site - Carbonnière Tower is a defensive tower from the 13th century which stands in the fields surrounded by marshland. This is an area of exceptional environmental treasures which has been recognized by many labels. This is an area of wetlands, of marshes, lagoons and sansouires. These varied spaces are home to exceptional wildlife.
Bulls are raised here and this activity plays an important environmental role and contributes to preserving biodiversity. The Camargue terroir also produces many other emblematic products such as the “vin des sables”, rice and salt.
