Outstanding Site of Taste - Sweet Onion from the Cévennes


The Cévennes AOP sweet onion territory is located in the heart of the southern Cévennes and Gard, at the foot of Mont Aigoual.
Cultivated in terraces furnished by man since the Middle Ages, it reflects a traditional know-how perpetuated today by 120 producers.
The dry, hot and sunny climate combined with the presence of numerous sources has allowed the development of this culture.
With over a thousand terraces approved as PDOs, this exceptional terroir has shaped a remarkable landscape over the centuries.

The product - It is the only sweet onion that can be preserved naturally without anti-germination treatment. Soft, it is also sweet and juicy.
Sown in early winter, it is transplanted in spring and harvested in summer. This manual work preserves the quality of the onion, which obtained the AOC in 2003, followed by the AOP in 2008.
From mid-August to mid-April, available on markets and in shops, it appears on restaurant cards, from table d'hôtes to starred chefs. It can be eaten raw or cooked, and also in the form of processed products. ,all year.
