Protected Geographic Origin (IGP) Production
The feed given to the chicken and capons raised in Les Cévennes must contain a minimum of three types of grains. The free-range raising must occur in geographical environment which is naturally sloping, rocky and shady, typical of the Cévennes area, which enhances the physical strength of the chicken and capon from Les Cévennes. .
Minimum raising time for Les Cévennes chicken is 84 days. Raising time for the capon from Les Cévennes is 150 days minimum.
